What’s for Dinner? – Meatballs!

To spice things up, I will occasionally post some of my favorite family-friendly and healthy (or healthier) recipes. 

Today’s menu is:

*Baked Meatballs

This is my go-to recipe for meatball sandwiches, spaghetti and meatballs, or to just have as a delicious little snack!  These meatballs freeze well, too, and are great for babies who are starting to eat meat (make sure there is not an egg allergy). These meatballs are baked instead of fried making them much healthier. I promise your family will love them!




  • 1 pound LEAN ground beef
  • 3/4 cup bread crumbs
  • 2 teaspoons dried Italian seasoning
  • 2 cloves garlic, minced (or pressed)
  • 1/4 FRESH grated Parmesan cheese
  • 1 egg, beaten
  • 1 tsp. onion powder
  • 1/4 tsp. salt (I usually just use sea salt and crank it a couple of times)
  • A couple cranks fresh black pepper

    1.  Preheat oven to 350 degrees (175 degrees Celsius)

    2.  In a bowl, gently mix together all the ingredients using your hands.  Get the kids involved, they will be more likely to eat them!

    3.  Shape into 12 meatballs.

    4. Place meatballs in 9×9 baking dish lined with foil and then sprayed with non-stick cooking spray (this makes for quick easy cleanup!)

    5.  Bake for 20 minutes uncovered.

    What a precious picture of Maddie!!! She’s grown up so much. Gosh, she looks like a baby in that picture. Thanks for the recipe. I have never made good meatballs. :-)

    First, LOVE the Pic! Have you ever tried or do you think this recipe would work well with ground turkey? Otherwise I think we doing this tonight!! Thanks!

    It definitely would work with ground turkey! I’m just not a fan of ground turkey because so often it actually has MORE fat than lean ground beef. Let me know what you think! Makes the BEST meatball sandwich. :)

    I use a very similar recipe, but I put in freshly chopped curly parsley….so good. We had meatballs this week too…Don made them! I know!

    I agree on the ground turkey. I still use it, but it doesn’t taste as well. I did do a recipe from Best recipe Light for turkey burgers and it was fantabulous!! Now you need a pic of Randy doing the same ;-)
