Delicious & Healthy Valentine’s Menu

Looking for the perfect Valentine’s meal for your family?  I have you covered!

Nikky’s Crab-Stuffed Salmon


  • 2 salmon steaks (at least ½ inch thick)
  • Olive Oil
  • 4 oz. light cream cheese
  • 1 small garlic clove, minced
  • Shake or two of red pepper (optional)
  • Can of crabmeat, drained
  • Cracked Salt and pepper
  • Lemon slices

1. Preheat oven to 400.  Line baking dish with foil (for easy cleanup) and spray with nonstick cooking spray.

2. Slice the salmon steaks open creating a pocket.  With fingers, lightly cover salmon with olive oil.  Season with salt and pepper.

3. In small bowl, mix together cream cheese, crab meat, red pepper and garlic.

5. Stuff salmon with cream cheese and crab mixture.

6. Put the salmon, skin side down on prepared baking dish and bake for 20-25 minutes (until flakey).

7. Garnish with lemon. 

*Serve with freshly sliced avocado (sprinkled lightly with garlic salt and a little lemon), and couscous. 

Nikky’s Perfectly Cut Sugar Cookies

Valentine’s Day wouldn’t be complete without a little sweet treat!

Remember, it is all about moderation. :)


  • 1 (3.5oz) package instant white chocolate pudding mix
  • ½ cup butter at room temp
  • ½ white sugar
  • 1 egg
  • 1 ½ cups flour
  • ½ tsp. baking soda
  • 2 tsp. vanilla extract (can use almond, coconut, etc… for variety)

1. Cream together butter, sugar, and pudding mix until smooth. 

2.  In small cup, mix egg and extract, then poor into butter mixture.

3.  Mix together flour and baking soda.

4. Gradually stir in flour into the butter.

5. Beat until smooth.  It will be pretty thick (like pie crust)

6. Roll out on parchment paper (you won’t even need to flour it!)

7. Cut with your favorite cutters

8. Bake at 350 for 7-9 minutes, depending on how you like them done. :)

9. After they cool, dip the top of the cookie in glaze (recipe below) and decorate with sprinkles if desired.

Sugar Cookie Glaze


  • 1 ½ cups sifted confectioners sugar
  • 1 tbsp. light corn syrup
  • 2 tbsp. water
  • 1 tsp. CLEAR vanilla (you can use imitation)
  • Food coloring of choice

1. Stir all ingredients together until smooth. Dip top of cookies directly in.  Let dry before stacking.
